Serves 4.
Ingredients
- 4 hard-boiled eggs, halved 
- Salt and pepper 
- 2 oz. Ricotta cheese or cream cheese 
- Pinch of grated nutmeg 
- 1/4 tsp. cayenne pepper 
- 2 Tbsp. grated Parmesan cheese 
- 2 Tbsp. cooked spinach, finely chopped 
Method
- Remove yolks from the egg halves and put in a small mixing bowl. 
- Add the cheeses and the spinach. 
- Beat the mixture until it is smooth. 
- Season to taste with salt, pepper, and nutmeg. 
- Spoon into the empty halved egg whites and sprinkle with cayenne pepper.
